Recipe for Dim Sum Style Chicken Feet

Golden Phoenix Claws are a delicious snack in many parts of the world, particularly China, Taiwan, Malaysia, Hong Kong, the Philippines, South Africa, Jamaica, and Peru. Otherwise known as Dim Sum Style chicken feet, this tasty treat is steamed in black bean sauce. Golden Phoenix Claws can be found on menus at dim sum restaurants around the world. In China and Taiwan, this Asian delicacy can even be found at most supermarkets and street vendors.

Dim sum chicken feet might not be to everyone's tastes, but for those looking for delicious dim sum bursting with flavor and texture at a cheap price, you can't go wrong with Golden Phoenix Claws. The taste is unique and tender with a rich succulent taste to it.

Dim sum style chicken feet are easy to make at home. A Taiwanese friend of mine was more than happy to share her family recipe for dim sum style chicken feet with me. The feet are fried first, then marinated, then steamed.

Please remember to wash the chicken feet first and chop off toenails before you start cooking. Cut the feet into quarters.

Dim-Sum Style Chicken Feet

You will need:
1 pound chicken feet
2 quarts oil
2 quarts water
1 ounce fresh ginger
3 pieces star anise
2 ounces Chinese parsley roots
2 ounces maltose sugar

Marinade:
2 tablespoons oyster sauce
1 tablespoon sugar
2 tablespoons soy sauce
1 tablespoon sake
1 ounce chopped chile pepper
2 cloves garlic, minced
1/2 teaspoon white pepper
1 tablespoon black bean sauce
1/2 teaspoon sesame seed oil

Heat the oil and mix the chicken feet with maltose sugar. Fry them until they are golden brown. It should take about 7 minutes. Remove the feet and drain.

Boil water and add ginger, star anise and parsley roots. Add the chicken feet. Bring the mixture to a boil again. Then reduce the heat and simmer them for 90 minutes. Drain.

Combine the marinade ingredients and whisk thoroughly until it is well mixed. Marinate the feet for 24 hours. Before serving, steam the feet, and marinade for 15 minutes. Enjoy!

If you are eating chicken feet for the first time, eat the toes first followed by the soft plump part in the middle of the feet. The soft, gelatinous texture in the middle is bursting in flavor. Don't try to bite the skin from the bone. Instead, bite the toes off and then take the bone from your mouth.

thanks for this. i am trying this out today. but i lack some of the ingredients so i substituted some and added some. hehe i still hope it comes out fine. but of course, i have the anise! it makes all the difference. :D
